# How To Make It:

01 - Toss pork slices with 1 tbsp soy sauce and 1 tsp cornstarch in a bowl. Set aside to marinate for 10 minutes.
02 - Cook noodles according to package instructions. Drain thoroughly and set aside.
03 - Combine all stir-fry sauce ingredients in a small bowl. Stir until sugar dissolves completely.
04 - Heat 1 tbsp vegetable oil in a large wok or skillet over high heat. Add marinated pork and stir-fry for 2-3 minutes until browned. Remove pork from wok and set aside.
05 - Add remaining oil to the wok. Add garlic, ginger, bell pepper, carrot, and sugar snap peas. Stir-fry for 3-4 minutes until vegetables are just tender-crisp.
06 - Return pork to the wok. Add cooked noodles and stir-fry sauce. Toss everything together for 2-3 minutes, ensuring noodles are well coated and heated through.
07 - Add spring onions and toss briefly. Remove from heat immediately.
08 - Serve immediately, garnished with sesame seeds and fresh coriander or sliced chili if desired.

# Expert Tips:

01 -
  • Everything happens in one pan, meaning less cleanup and more time to actually eat
  • The sauce hits that perfect sweet and savory balance that makes you go back for seconds
02 -
  • High heat is non-negotiable for that authentic stir-fry flavor and texture
  • Overcrowding the wok causes everything to steam instead of sear
03 -
  • Prep every single ingredient before turning on the stove
  • Keep a bowl of water nearby to quickly cool down the wok if needed
