Fresh DIY seaweed rolls with crisp vegetables, creamy avocado, and sprouts for a healthy light meal.

# Ingredient List:

→ Vegetables

01 - 1 medium cucumber, julienned
02 - 1 ripe avocado, sliced
03 - 1 cup mixed sprouts (alfalfa, radish, or broccoli)
04 - 1 medium carrot, julienned
05 - 1 small red bell pepper, julienned

→ Others

06 - 8 sheets nori (roasted seaweed)
07 - 2 cups cooked sushi rice, optional
08 - 2 tablespoons rice vinegar
09 - 1 tablespoon toasted sesame seeds
10 - Soy sauce or tamari, for dipping
11 - Pickled ginger and wasabi, for serving (optional)

# How To Make It:

01 - If using sushi rice, mix the cooked rice with rice vinegar and allow to cool to room temperature.
02 - Place a sheet of nori with shiny side down on a bamboo sushi mat or clean kitchen towel.
03 - Spread a thin layer of rice (if using) over the lower third of the nori, leaving approximately 3/4 inch border at the top.
04 - Arrange cucumber, avocado, sprouts, carrot, and bell pepper in a line across the rice. Sprinkle with sesame seeds.
05 - Using the mat, roll up the nori tightly over the fillings, pressing gently to seal at the top edge with a small amount of water if needed.
06 - Repeat the rolling process with remaining ingredients to prepare 8 rolls total.
07 - Slice each roll into bite-sized pieces using a sharp knife that has been dipped in water.
08 - Plate rolls immediately and serve with soy sauce or tamari, pickled ginger, and wasabi as desired.

# Expert Tips:

01 -
  • You control every ingredient, so they're as fresh and colorful as you want them to be.
  • No cooking involved means you can make these on nights when turning on the stove feels like too much.
  • They're naturally vegan and gluten-free, which means more people at your table get to enjoy them.
02 -
  • Your knife needs to be truly sharp and truly wet, or you'll end up with mangled rolls that taste fine but look like you wrestled them into submission.
  • Cold rice rolls up beautifully, but warm or hot rice falls apart like it has no spine, so patience while cooling actually saves you heartbreak.
03 -
  • Damping your knife blade between each cut prevents the rice from sticking and gives you clean, beautiful pieces that look homemade in the best way.
  • Don't overfill your rolls or they'll burst when you roll them, and the magic is in the restraint, in knowing that less is often more delicious.
